Rice Pilaf à la Weber BBQ Recipe White
wine, yellow pepper, and plum tomatoes add elegance to an indispensable side dish.
1 cup sliced fresh mushrooms 2 tablespoon butter 2 cups boiling
water 1/4 cup dry white wine 1/2 cup regular brown rice 1/2 cup wild
rice 1/2 cup chopped onion 1/2 medium yellow pepper, chopped 2 ripe
plum tomatoes, chopped 1 teaspoon salt 1/4 teaspoon pepper 1/2 teaspoon
ground cumin (optional) In saucepan over medium-high heat cook mushrooms
in butter for 5 minutes, stirring occasionally. In an 8x12-inch foil pan
combine cooked mushrooms, water, wine, brown rice, wild rice, onion, yellow pepper,
tomatoes, salt, and pepper; add cumin, if desired. Cover with foil; seal tightly.
Place pan in centre of cooking grate. Cook 1 hour or until rice is tender,
stirring once halfway through cooking time (reseal tightly after stirring). Makes
