Mediterranean Topping for Cod

1 tbs olive oil
1 small onion, chopped
1 red pepper, chopped
225 g (8 oz) tin chopped tomatoes
75 g (3 oz) black olives, chopped
1 tbs Schwartz Spicy Italian Pasta Sauce Seasoning
1 tsp sugar
4 x 175g (6 oz) cod fillets, skinned
Heat the oil and fry the onion and pepper until soft. Add the tomatoes,
olives, Spicy Italian Seasoning and sugar and simmer for 15 minutes,
until thickened and reduced.
Place the cod on the grill and spoon the tomato mixture evenly
over the fillets. Grill for 20–25 minutes or until cooked
through.
Serve on a bed of roasted vegetables.
